Cranberry Meat Loaf
2 cups cranberries
1 cup water
1 cup sugar
2 cups ground cooked ham
1 pound ground raw turkey breast
1/2 cup dry breadcrumbs
3 Tablespoons chopped fresh parsley
1 small onion finely chopped
1/2 teaspoon salt
1/8 teaspoon ground black pepper
To make the sauce - Pick over cranberries and rinse thoroughly. Boil the sugar and water in a saucepan for 5 minutes. Add the cranberries and boil, without stirring, until all the skins pop, about 5 minutes. Remove from heat and cool in pan.
To make the meatloaf - Combine ham, turkey, breadcrumbs, eggs, parsley, onions, salt and pepper. Add 1/2 cup of the sauce and blend well. Form the mixture into a round loaf, place on a baking sheet and bake in a preheated 375 degree oven for about 45 minutes. Pour the remaining sauce over the loaf and bake for 15 minutes more.
The first night we found the sauce to be much to sweet, but by the next day it was fine. I would probably either cook the sauce further in advance next time or cut back a bit on the sugar. The loaf by itself was good, but could have used a little something. Perhaps a bit more onion or the addition of sage, rosemary or thyme?
