Last night was cheese tortellini with diced italian style tomatoes, garlic, carrots, onion, yellow bell pepper, zucchini and the last bit of fresh basil with parmesan cheese on top. It was good but really could have used a bit of tomato paste to thicken it up but I was out of that.

Tonight is something with pork tenderloin.

You could try Yosemite Chicken.
It's excellent for breasts - they come out nice and moist.

I was giggling when I read that too!

Tonight we're having a store bought shepherd's pie. Looks good actually.

I think it's a pasta night. Either Mac and Cheese (if I get my act together as soon as I get home) or I'll grab some filled pasta from the freezer and do the fresh tomato and basil sauce.

I'd turn down pizza. I'm not a fan of pizza.

On the way home I had a craving for Salisbury Steak and Onions so I stopped at the grocery, got the lean ground and a lovely big onion, went to the gym and then made the steak with deep brown, delicious gravy, baby red potatoes and purple carrots. I basically inhaled it because it was so good.

Slow roasted elk roast, roasted in a mixture of french onion soup and cr. of mushroom. Less carbs than home made gravy. Towards the end I will throw in a few baby carrots, a couple of small potatoes...cubed, and some tiny whole onions. Just have to watch how much DH puts on his plate. *sigh* I am the food police now. But I've lost 3 lbs and got my blood glucose down to 111 this week, a big improvement.
Now to see bigger improvement with DH.

I'm cooking battered fish fillets, wedges, coleslaw and fresh lemon tonight. I've got some asparagus to use up too, but Kieran wont have a bar of that.

I'm making brown sugar grannies with baked custard tonight, for afters. Should be interesting.

It's the tomato and basil. I decided it was time to harvest the rest of the basil, before Mother Nature zaps it unexpectedly. So, I have about 5 cups of it, of which I'll swipe a good handful for the pasta, and make pesto of the rest.
