Both of my cats are former barn cats and they see desperate to go outside sometimes. However, being former barn cats, they are somewhat skittish. Is there any harness that doesn't require slipping their legs or head into (which stress them out)-just snap and go? Any advice would be great.

Just snapping on a harness would be like a leash. (There are leashes for kitties, as well)
A harness does go over the head and shoulders to keep an animal (skittish, aggressive, or too excited) stable. Somewhat like this:

A cat leash wouldn't hold very skittish cats too well, because they could struggle out of it and run off. A harness will keep them from doing that (keeps them more secure). It might be stressful for you and them to get it on, but it's a great time to bond.

You will probably want an H style harness, they do up with a clip around the neck (like a collar) and a clip around the belly.
I much prefer Roman style, but they go over the head so unsuitable for you situation.
