I also use a very good quality balsamic vinegar - the one I'm currently using has been aged 35 years and is directly from Modena, Italy. It's worth the extra dollars because it's even good on ice cream.

Yes Wendy, there are some that are aged that long and perhaps longer. This particular bottle I have was given to us by the young man our daughter dated for awhile from Modena, Italy, home of balsamic vinegar. The consistency is rather thick compared to the stuff we get here. They take shavings of Parmesan Regianno (sp?) and sprinkle a few drops of the vinegar over it as part of their antipesto.Originally Posted by pushylady
