I love home made soup!

I love home made soup but I hate the prep time of having to chop all of the veggies, so I did something different tonight!

I decided to do all of the prep work for 4 batches, and freeze it in large freezer bags.

Each bag contains all of the ingredients, including olive oil and seasonings to make 1 batch of soup. All I have to do when I want soup is to add the frozen stuff to 7 cups of broth and cook until done. Then add the tomatoes and spinach at the end.

I guess it's kind of along the line of those frozen slow cooker meals that you can buy.

I plan on doing this for other complex things too like my orange chicken recipe. It's so tedious to do because it has lots of small diced veggies, so if I can take away some of the prep work and freeze a few whole "raw" recipes, so that I can just put one into a casserole dish and bake, I'll be thrilled.

I love homemade soup - there is nothing like it!

I have a recipe for brunswick stew sitting on the fridge - I need to make that - it is great for freezing and eating when you need it!

Wow, great idea! I'm a big soup eater and LOVE homemade soup but too lazy to make it. I usually steam then freeze most of my veggies for later dinners. Not sure why I never thought of using it for soup. Thanks for the idea!

Great idea Linda! I do the same for my spaghetti and meat balls. It takes ages to roll up the little meat balls and brown them for the spaghetti sauce so I buy several packages of ground beef and make a big mixing bowl full of meatballs, saute them and then freeze them. When I want to make spaghetti and meat balls I just have to prepare the sauce which is just mincing an onion basically and adding spices, tomato sauce and paste, drop in the meatballs and let it simmer away.

re: OP....freezing is wonderful.... I do it with everything. When I could a batch of soup, I will freeze it in individual portion sizes.... normally a batch of soup for me is a 7qt slow cooker and I'm the only one that eats it. My family is afraid of veggies


Great time saver: If you use ground beef alot, cook a whole whack of it up and freeze in ziplocs. We use it or ground turkey/chicken in alot... soup, noodles n' sauce, spagetti, nachos, etc.

The freezer is your friend
Especially in times of financial difficulty, or physical hardships. I found that out back when I was on Welfare, single mom and was going to debt counselling.
