So with all these chili recipes being posted
I've been wondering if anyone has a good white chili recipe. I've looked online but I havent found a recipe that sounds like exactly what I want, and since I've only had it once or twice I dont want to just start tossing stuff into a pot and hope it turns out

Here's mine. It's yummy, low fat, and quick, too!

1 onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
Around 1 pound lean pork (tenderloin works well or pork chops...whatever's handy)
1 can white beans, rinsed and drained
1-1/2 cups chicken broth
1 can mild green chiles
1 teaspoon ground cumin
1 teaspoon dried oregano
2 or three dashes hot pepper sauce
1 teaspoon salt
1/4 teaspoon (or so) pepper

Sautee the onion, pepper, and garlic in a pan with nonstick spray until softened. Add the pork and cook until browned. Stir in the rest of the ingredients and simmer for at least 15 minutes or so (but you can simmer longer if you have the time...it just gets better the longer it cooks).

You can also sautee everything then toss it in the crockpot and slow cook it for several hours.

I like to top it with a little shredded cheese.
