My Chili Recipe

I was asked for my recipe for chili. Here it is.

2 pounds ground beef, browned
1 large onion
1 large green pepper
1 large can diced tomatoes
1 regular size can diced tomatoes
1 regular size can tomato sauce
1 can tomato paste
1 cup ketchup
1 can stems and pieces mushrooms
1 can red kidney beans
1 can white kidney beans
1 can black beans
other types of canned beans if you want. I sometimes use chick peas or pinto beans and even lima beans.
worchestershire sauce
frozen kernel corn (optional)
black pepper
garlic powder
chili powder

In a non-stick frying pan add the tomato paste and brown it. Stir it constantly over moderate heat and as it browns and sticks to the bottom, add some water to deglaze, keep stirring to lift the browned paste off the bottom of the pan, let the water evaporate and the paste brown, add more water, stir. Repeat until the paste is a nice brown colour. Don't burn it


In a large pot brown the meat.

In a food processor, finely chop the onion and green pepper and add it to the meat.

Add all of the canned stuff, including the juice from the mushrooms and beans plus the ketchup. Stir well.

Add worchestershire sauce to taste. Maybe 1 tablespoon or so.

Add garlic powder to taste. Maybe 1 to 2 teaspoons.

Add as much chili powder as you like. For the pot I used I used about 1/4 of a cup.

Stir in the browned tomato paste. Deglaze the pan by adding some water.

Bring to a boil and simmer for about 3 hours.

Add some frozen kernel corn.

Well, now, just a goldurn minute here. I'm not a typical Texan in any way, shape, or form, and I too make nontraditional chili. But even I have to take exception to putting lima beans in it!


I'm afraid that's a hangin' offense around these parts, Miss Linda.

do you actually put a cup of ketchup in it? the stuff you add onto chips?

does it taste nice without chilli powder in it too? hehe

What is the purpose of browning the tomato paste, Natalie?

I've never heard of that being done before.

Does it add to the flavor or just give the chili a nice color?

I make a chipotle-black bean chili that is killer. I basically took a recipie
I was given a few years back and tweaked it here and there (added more
cumin, substitued black beans for kidney beans because I like them better,
and added in the chipotle peppers) until it tasted nothing like the original.

Making a pot takes about 6 hours (including prep and clean-up) so it's
usually a once a year event.

That sounds totally delicious!
Since the corn is optional I would probably omit that, since I'm not big on corn in chili. Now I'm hungry, too!

I don't usually put in lima beans, but I have done it just to mix it up and give it variety.

Yes, ketchup/catsup that you put on fries/chips/burgers. I guess you could leave out the chili powder, but it wouldn't taste the same. The chili powder is a main ingredient in chili.

Browning the tomato paste carmalizes the sugar in the paste. Tomato paste on it's own is very bland. But if you carmalize it (brown it) first it will add both colour and flavour to whatever you add it too.

You can add that to it. I don't like really hot off the top foods. The recipe I gave above is "spicey" and the hotness is a cumulative effect. You don't notice it with the first spoonfull, but by the time you get to the bottom of the bowl you have a bit of a tingle going on in your mouth.

I don't usually add corn to my chili either. I prefer it plain with just the legumes (beans). But again, I decided to mix it up and added some corn to it too this time. Usually I wouldn't.

So is mine. I was even told by my old boyfriend (who was from Texas) that MY chili isn't real chili.
I use thyme, parsely and oragano in mine along with chili powder and beans so it's basically my spagetti sauce souped up a little bit. Hey, my mom was Italian, what can I say. It's good, but this sounds SO much better!!

Ketchup on chips. Who does that unless your Canadian.

I am not in Texas, but the chili I made yesterday, (and couldn't really enjoy since I got sick) had janapenos in it.
I basically make it the same way I make my salsa, but add beans, chili powder, basil and oregano.

I use dried pinto beans, cooked until tender and put the whole thing in a crockpot.

I find that the jalepenos give it quite a kick.

um the British, the Australians, almost every other English speaking country?
