I have some chicken in the fridge from Sunday, so we're having

hot chicken sandwiches. (for those that don't know, it's simple.... put a slice of bread or two on a plate, throw some chicken on it, cover with chicken gravy) Very easy meal.

OMG - those root veggies sound sooooo good. My mouth is actually watering as I sit here waiting for the clock to roll around to 5 so I can go home. I love root veggies. Our daughter even prefers her potatoes raw. She's always grabbing them when I'm trying to prepare dinner.

My mom used to pickle them (best pickled beets I've ever had) or we would have them fresh, i.e., she would boil them, peel them and serve them warm with vinegar, salt and pepper. I have also done them by sauteeing pears and onions in a bit of butter then pureeing that with cooked beets. This is actually very good. I do have to confess I like the beet tops even more than the beets but those are very hard to get. Same with turnip greens - love them!

I also do a great turnip recipe with apples. See below:

Turnips & Apples

1 large turnip
1 tbsp. butter
2 apples
¼ cup brown sugar
Pinch of cinnamon

CRUST

1/3 cup flour
1/3 cup brown sugar
2 tbsp. butter

Peel, dice, cook, drain and mash turnip with butter.

Peel and slice apples – toss with brown sugar and cinnamon.

Arrange in greased casserole – layer of turnip, layer of apple wedges, and another layer of turnip.

Combine crust ingredients to a crumbly texture and pat on top of casserole.

Bake at 350º for 1 hour.

I love roasted beets and I often argued with my boss at Subway about having beetroot on our subs.

Mmmmm...that sounds super good. I love pickled beets too - my great grandmother made the BEST! I ate so many one time when I was little that my pee was red! LOL

Sigh...have a migraine today so unless someone else makes something I'm probably not eating much.

In honor of St Pattys Day I'm making a Reuben Casserole
Ok, so I'm not Irish
It's just like a reuben sammich but in casserole style
I make it with seasoned pastrami instead. Guess I should call it pastrami casserole but I'm following a reuben recipe lol

You'll likely enjoy those. I find they cook a little faster than the recipe says, and the beets are always last done. I also start them out with the beets separate, otherwise they bleed all over everything else. I toss them together usually on the second toss.

Some good sounding yums there. My Dad did pickled beets, too, and they were awesome. Another thing we love to do with beets is Harvard Beets -- the Baked Ham and Scallopped Potatoes dinner is not complete without them.

Hmmm...must give that a try. We've never been gung-ho about turnips, but I do them from time to time for variety. Mashed with lots of butter and pepper is pleasant. This treatment sounds nice, too.

Last night l made pork chops with rice and green beans though
I was proud because I never cook and it was delicious!

Tonight was egg salad. Fiance has class, so I made something simple. And now I'm snacking on some dry cereal and hot chocolate before bed. Tomorrow is the good meal though. Corned beef, cabbage, and carrots. I know I know, late, but FH is going to be home all day so he can cook it. I can't wait

Hubby's family are not big veggie eaters so I try to make things they like and this one was a hit.

You all could knock me over with a feather tonight. I came home to the smell of food cooking. Hubby had stopped in our big grocery store to pick up some fresh fruit (he always needs lots of fruit summer and winter). He just does not cook! Anyway he bought some pita pockets, a strip loin steak, shitaki mushrooms and was busy frying up onions, mushrooms and the steak when I got in. Naturally he used 3 different pans to do this.


I asked him if he had gotten any hummus to spread on the pita bread first and of course he had not so I went and picked up some hummus and some shredded mozzarella. Bless his heart, he didn't realize that when I make this for us I use tortillas instead of pita pockets but they were OK. I spread them with hummus, add pieces of the cooked steak (or chicken if you prefer), fried mushrooms and onions (red and green peppers as well if you like them), and top with shredded cheese and some parmesan. I put the tortillas under the broiler just to melt the cheese, then roll them up and enjoy. For the pita pockets we just nuked them to melt the cheese. Very tasty.

I had two Eggo waffles for dinner last night
Had pole practice until 7:30 then hubby said he wasn't all that hungry anyway. Tonight I either want him to grill the sirloin steak we got, or to put this garlic herb and wine marinade on some chicken breasts and grill those

I have a craving for Mexican today so I am thinking hard taco's with homemade salsa and guacomole, and a nice green salad. I also have a ripe mango that will be perfect for dessert.

I bought some haddock fillets at the store and some fish fry seasoning so I'll be having fried fish and I'm going to try making my own french fries and baking them. I love fish but havent had it in ages, I cant wait for dinner- Im so excited!
