recipes for left over turkey

anyone have quick easy recipes for left over turkey. Just reheated turkey is a little bland. Thanks much.

I thought about turkey divine but all recipes call for some amount of cheese.

Turkey Pot Pie for 2

Sauce:
4 T \tbutter
4 T \tflour
2 t \tsalt
Dash of freshly ground pepper
2 c \tmilk
2 \tegg yolks, slightly beaten
2 t Chicken or turkey boullion powder or equivalent*
1 t Tarragon

1-1.5 c cooked veg (carrots, onion, peas, broccoli, mushroom, celery -- what have you)
1-1.5c cooked turkey
1/4 c \t sherry (medium dry)

Puff pastry, mashed potatoes or biscuits

Melt butter over low heat. Add flour, salt and pepper slowly, stirring constantly and cook until thickened. Add a little of the hot milk mixture to the slightly beaten egg yolks, then return them to the milk. Stir and cook about 2 minutes. Add seasonings, turkey and veg. Add sherry, stir well and pour into individual 2-cup casseroles. Top with puff pastry, mashed potatoes or biscuits and bake at 400 F for 20-30 min, until sauce is bubbling.

*If you have a product called "Better than Boullion", that is really good, but any similar product that generally calls for one teaspoon per cup of water will be fine.

I have taken sliced turkey and battered it in egg and then flour and then fried it. My family loves it cooked like that.
