who wants some banana bread?

Anyone hungry? I just baked some yummy banana bread using up 3 of the huge pile of frozen bananas I've collected in the freezer. I really must bake more often! This is a new recipe for me using cream cheese, and it's really moist and yummy!
Enjoy some while it lasts.....

My mouth is watering!! A piece of that banana bread & a big glass of milk!! I was actually thinking I need to get started on Holiday baking. I bake alot of stuff early & freeze.

I just made a huge batch the other day for the first time in Years.

That looks VERY good!

When do you add the cream cheese & how much??

One of the things I've missed while being off work is baking, but it's just so expensive.

I have a whole book on "loafs" and I can't wait to start making them again. They're so easy to do in my Kitchenaid. I don't usually make just one loaf. If I'm baking I'll double the recipe and freeze one batch. So cook/bake once and eat twice. Plus it's always nice to have a stash of baking in the freezer so that you don't have to run out and buy something for pot lucks or unexpected company.

Years ago when I worked on a different ward at the hospital, I would take something for us to munch on 2 or 3 times a week. When I left, I think that's what they missed and not necessarily me


The ward I'm working on now have a bunch of bakers and food lovers!
Nearly everyday someone is bringing something to the ward to eat.

after posting this thread, I went back for another slice and thought "hmmm, the top didn't look like that before..." There was a little Pushkin-sized bite out of it! Naughty boy.

I don't know why I don't think to freeze more stuff - that's a good idea!
