Healthy chicken dish?

We are having a PotLuck on Friday at work. Since I am on a diet I wanted to bring something in that is healthy but easy too make. I would really like too use chicken some how. Does anyone have any suggestions?

I do, its from a Fit4 cookbook. But I'll have to wait till I get home to post the recipe for you - it tastes like fried chicken, but its baked - much more healthy for you

Here's the recipie I was telling you about in my first post.

Unfried Chicken

4 chicken breasts - boneless/skinless
2 cups flour
1 cup packaged breadcrumbs
salt, pepper
1 cup skim milk

Non-stick cooking spray

Mix flour, breadcrumbs, salf, pepper together
Dip cleaned thawed chicken in milk. Roll in flour mixture until breast is well coated. Place in a casserole dish that has been thoroughly coated with cooking spray. Arrange breasts close, but not crowded.

Cook at 400 degrees for 50 minutes, turning once halfway through

Serves 4

Lemon Chicken

4 chicken breasts, skinned and boneless
1/2 teaspoon paprika
1/2 teaspoon pepper
1/2 teaspoon garlic powder
6 large mushrooms, sliced
1/2 cup nonfat milk
2 teaspoons cornstarch
1/4 cup scallions thinly sliced
1 Tablespoon parsley, minced, or 1 1/2 teaspoons dried
1/4 teaspoon grated lemon peel
1 Tablespoon lemon juice
Minced fresh parsley for garnish (Optional)

Pound chicken between plastic wrap or wax paper with flat side of meat mallet to 1/8 inch thickness.

Combine paprika, pepper and garlic powder. Sprinkle both sides of chicken with mixture.

Spray skillet with nonstick vegetable spray and cook chicken until it is brown and cooked through. Remove chicken to a plate and keep warm.

In the same skillet saute mushrooms, stirring frequently. Combine milk and cornstarch; add to mushroom mixture. Cook and stir 2 minutes longer. Remove from heat, stir in scallions, parsley, lemon peel and lemon juice. Spoon lemon-mushroom sauce over chicken. Garnish with additional chopped parsley, if desired.

Serves 4.

This is a very easy casserole...

3-4 poached bonelesss/skinless breasts,chunked
1 can (healthy request)cream of chicken soup
1 can (healthy request)cream of mushroom soup
frozen peas(amount to taste)
canned(drained)or fresh sauteed mushrooms
1 8 oz. container fat free sour cream

Toss this in a bowl...you can vary the veggies to your taste,change the soup flavors to your liking,add sauteed onion or use green onion...your choice.Non stick spray a casserole dish,toss the mixture in and top with crushed reduced fat ritz crackers or seasoned bread crumbs if you prefer.
This can be nuked in the microwave til bubbly or baked in the oven at 350.
Great with a salad!
