I'm attempting to make pumpkin pie from scratch. I bought a small pie pumpkin at the store this morning, cut it up, boiled it and scraped out the yummy pumpkin and then put the filling together along with a pie crust. It's already in the oven. I just pray that it comes out well since there is so much work involved in it that I didn't think was! If not, I still have the seeds I'm going to roast

Yeah, that's the main thing that I'm afraid of happening is it being raw in the center. I had that happen to me when I made a buttermilk pecan pie one time. It was actually really yummy, but a little gooey in the center, but I haven't tried making that one again. It was nice because the buttermilk cut the sweetness of the corn syrup. I'm going to test this one with a butter knife and make sure it comes out clean.

Wow, you are one brave soul!
I don't even like to bake a frozen pumpkin pie---I can never tell if the middle is set. I wimp out and just buy an already-baked one.
Hope your pie turns out great; hope you have lots of whipped cream!

I love pumpkin pie, but I just make it from a can. Last Thanksgiving my folks "brought Thanksgiving to me" by bringing their roaster, a turkey, and all the accompaniments... but my mother handed me the stuff for the pie and told me to make it... hers never turn out right.

So far it looks really, really good and I stuck a knife in it and it came out clean after about an hour of cooking it. Here's the recipe I used:

I also used their pie crust recipe, but had to use butter because I didn't have any shortening here at home.

I had never used a whole pumpkin before either, but it was actually easy.
I'll let you know how it tastes a little later after dinner!

I got one of the bigger pie pumpkins at the store so that was a mistake. I had a little bit of the filling left over after I filled up the pie crust. It was really liquidy when I poured it in, but it firmed up nicely!

Oh and the buttermilk pecan pie recipe (I really need to try this one again!):

The boyfriend already fussed at me for making the pie today (I haven't baked since July 4th!) because if it's there he will eat it LOL

Here's a trick I use to make sure the center of a pumpkin pie gets done before the edges burn:

Tear off a piece of foil big enough to cover the pie and fold it loosely in fourths. Starting about three inches out from the folded corner, tear out a quarter-circle, so when you unfold the foil, you have a six-inch circular opening in the center.

Place the foil over the pie and tuck the edges under all around. It'll keep the crust and the outer edge from getting done too quickly while the center cooks just right!

I thought it turned out good, but the boyfriend fussed at me again and told me to stop baking
. Like I said I haven't made anything since the week of July 4th for crying out loud! He's not a big fan of pumpkin pie so he just said that it was "alright". I really liked the crust. It was flaky. Besides I don't think pumpkin pie has that many calories as other pies. Or I'll just keep telling myself that to make myself feel better haha.
