What's for dinner tonight?

I'm making some baked salmon that is marinating in an olive oil, basil, garlic, lemon marinade in the fridge right now. As for sides I'm going to make some brown rice with mushrooms, shallots, and garlic in it..the recipe calls for onions but I have shallots here at the house so that's what I'm using. For a vegetable, I am going put some olive oil and kosher salt on some asparagus and roast it in the oven.

Anyone else cooking on a Saturday night or is everyone else partying it up and eating out?

I made a pot of chili today so I had some of that with topped with melted Cheddar cheese and toast. For dessert I had a piece of cherry pie my aunt dropped off this afternoon. It was really yummy


Had enough chili left-over to put 3 containers in the freezer as well..

I have a sore throat and cold today. I think it is the weather change.. lol

But here is what I am fixing.

Home made chicken vegetable soup! Made with.....

boneless, skinless chicken breasts cut into cubes, saute'd in extra virgin olive oil, along with chopped onions and garlic, throw in some fresh green beans, carrots, white beans, potatoes, elbow macaroni and simmer in chicken broth.

Served with fresh baked corn muffins...

DH loves my soup! This is the first time I have used olive oil. This is also the first time I used fresh green beans and white beans. I normally use canned but wanted it to be extra special.

Mm, yummy. Im not cooking tonight, I had yogurt and an apple with jalapeno cheese, Ill probably be hungry again in a while and move on to something unhealthy, like chips and salsa

Tomorrow Im planning to cook chicken and rice in the crock pot, with condensed soup and maybe a few veggies. No recipe so I hope it turns out!

There's ham I should use. Either omelettes with ham, mushrooms, peppers, onion and cheese or sliced ham and a cleanup of leftover veggies. Either way, there are also some nugget potatoes to panfry. I'll give the boy the choice if I can't decide.

Why use bonless skinless chicken for soup? If you use the whole chicken, the flavor is soooo much beter! I would reccomend trying it! I boil up a whole chicken cut in half with onion, celery and carrot (I sautee the veg a little bit first to bring out the flavor) till the chicken is falling apart and the veggies are mush. I strain that all and remove all the bones and other unwanted chicken bits and veggie mush. (pets will drool over you as you do this picking through process, SNACKS!) Then you have a wonderful stock that requires very little effort to make to build your soup on. I let the stock sit till cool and skim all the fat off it, and there is a lot with all the skin still on. You can do it a day ahead of time and pop it in the fridge and very easy to get all the fat out. Do not add the chicken meat back into the soup though till just about done with whatever veg you add to it, it will turn into chicken shreds.

I had a slice of pizza and for dessert we shared a caramel apple covered with bits of skor bar.
We were at a fair.

my sister is cooking something for my mom so when I go to pick up my little boy I will take some left overs home. MMM what will it be. I think it is some kind of pork chop dinner or something.

Thanksgiving Dinner (Canadian) with friends. I'm providing apple pie (just out of the oven and wafting its aroma all over the house
) and cheddar.
