I adopted a kitten at 6 weeks old from a pet store holding adoptions for a animal shelter. (she is now about 8 months old) The paper work said she has been fixed and you could see a scar. A few weeks ago she got out and I caught her with a male stray. I noticed this week all she does is sleep now. She also put on a good bit of belly weight. Is there any way she could be pregnant?

If the paperwork you received is not correct and she was not spayed then here are some ways to tell:
At 3 weeks gestation the nipples will turn a rosy bright pink and will start to increase in size. Belly size usually isn't noticeable until around 4 to 6 weeks.
You would not be able to fill any kittens moving until the final two weeks or so.
A vet can feel kittens inside the belly after around the 4th week but I would not recommend trying this without your vet as you could damage the kittens.

If there was an incision and all unless the vet really goofed, no probably not, but I would get her to the vet, just in case she caught something outside like worms, etc that's making her sleepy.

First I'm sorry you chose to buy from a pet shop. Second 6 weeks old is TOO YOUNG to get spayed. The youngest is 8 weeks and 2 lbs. Most breeders and others will get them neutered/spayed now around 3-4 months old.
Cats/kittens do NOT need to go into heat (they can have "silent" heats) to get pregnant. If she got out and you saw the male breeding her, chances are she IS pregnant.
You can get her spayed now before she gets any further along. If you choose to let her have the kittens, she MUST be kept indoors until she really is spayed. And the ideal is to keep any kittens for 12 weeks and have them spayed/neutered before you place them.
I would say the pet shop lied to you about the kitten being spayed.
