I just wanted to see if this is normal. Since I have switched my cat over to mostly wet food (3oz of wet and 1/4 dry). I do not see as much poop anymore. I do see a good amount of pee. Should I be concerned?

The pee seems normal because wet food contains a lot of water, which is really good for your cat and keeps her hydrated. As for the poop, I think that wet food has a lot less residue and fillers; therefore, you'll see less poop.
