I need a good Broccli Chedder soup recipe!

Blah! I swear I've tried my last store bought brocclie-chedder soup mix ever!
I have tried multiple cans/packages/etc of store bought soups and mixes and they are all just terrible! I've yet to find one that I really love so far....I've even tried doctoring them up by adding my own things to them but they still aren't good.

My absolute favorite soup is McAlister's Chedder Broccli soup- it's sooo good!
I'm pretty sure theirs is a mix of some sort, but i don't know -eithor way, theirs is amazing!

Do any of you have good recipes for homemade broccli cheese soup?

I have one that's really simple (so simple DH can actually make it). and only takes about half hour to make.


-1 med onion
-tbsp butter
-tbsp flour
-2.5 cups stock (I use vegetable, but you could use beef or chicken)
-1 large potato
-1 cup shredded cheddar
-Broccoli (about 1lb?)
-pepper/salt to taste

Melt butter in pan, add onion cook about 5 minutes or until they start to soften. Add flour and stir until it's absorbed. In a pot bring stock to a boil. Add chopped potato to stock, and onion when ready. When potato is cooked, mash into the stock. Add broccoli until cooked. Turn off heat and stir in cheese, stirring until it's all melted. Add pepper, and salt if needed.

I sometimes will add other things too, like cauliflower and shredded carrot.

Simple Cream of Broc and Chedder

2 bunches of broccoli
6 cups of water
1/2 cup chicken soup base
pepper
1 litre milk( the higher the fat content the richer the soup, I use 2%)
1/2 cup veg oil
1/3 cup flour
grated Cheddar.

In soup pot bring broccoli, water and soup base to boil and simmer until Broccoli can be mashed with a whisk..
Whisk until broccoli is broke up
add pepper and milk

Bring to a boil again, make a rue with the flour and oil and thicken the soup..
the more you add the thicker it gets, if you need to thin it out add a little water..

Place in a bowl and sprinkle with shredded cheese...


This is a basic creamed soup recipe that can be used with cauliflower, asparagus, leeks, potato's etc...
Cheese is optional

This recipe sounds sooo good. I'm going to have to make it sometime. Maybe even with artichokes! Do you use canned artichokes when you use them in place of the broccoli?

Yes canned would probably be best because of the cooking time...
