The B&W is cute, I think the black will really stand out on an adult. I'm not sure if a tortie would look as good in a sphynx... Unless the red was really strong, otherwise, wouldn't be as noticable as the coloring on a B&W.
As to choosing one....I'd probably ask the breeder about their personalities...what are you looking for? active? cuddly? etc. I could tell when my two orphaned kittens were ~5 weeks old that one preferred to be handled and cuddle, etc. while the other did not.
As to the wrinklieness (is that even a word?) of "normal" cats... My adult SH cat that licks his hair off (Toby) had some "folds" i.e. where his belly meets his leg, etc. but I don't think he is wrinkled like the kitten... Wouldn't the wrinkles just be a sign of extra/loose skin that kittens have and "grow into"...I know their neck skin is loose so that the mother can move them without harm...
