Timeframe on getting used to new food?

I have fed my cat Purina One her whole life and she did well on it. But when I had to switch my dog over to a better food for allergies I started researching food and decided I wanted Roxy on better food too. I first switched her to Innova and she seemed to really like it (it was just a sample bag). When I went back to get more food they were completely out of the Innova that I needed! That put me in a bind b/c I was completely out of food at home. So I talked to the lady that worked there and she recommended Chicken Soup, which I also had read good stuff about on here. Roxy will eat the Chicken Soup when she gets really hungry but a lot of times just turns her nose up at it initially. I don't believe she ever eats all of it either.

How long should it take for her to get used to it? I know animals that have been on higher carb foods their whole life need some time to get used to food of different content. Should I just try feeding her Innova again? I cannot recall the price on Innova though, I can't go too expensive on the food.

ALSO, it seems all the foods I have tried (Canidae/Felida, Innova, Taste of Wild (dog)) the cat likes the dog food more than the cat food and vice versa...why would that be? lol.
