Hi everyone

I'm having a couple of friends over on saturday night for dinner, and I don't know what to cook.
Does anyone have any suggestions for something that's really easy to cook? There will be 4 of us altogether. No vegetarians, one nut allergy.
We had some friends over tonight and I cooked meatballs in a really tasty sauce, (I cooked them with chopped tomatoes, red curry paste, coconut milk, ginger, chickpeas and sweet potato) with rice, followed by jam roly poly with custard

It's a big deal for me, having people over, as I've always found it a bit scarey cooking for others, in case it doesn't taste good, or whatever. So I'm trying to do it more and more, to build up my confidence, and it's cheaper than going out!
I would like something a bit more impressive for Saturday........
Any ideas welcome!

Ooooh, those meatballs sound sooo good, I don't suppose you'd want to share the recipe?

Hmmm...
Grilled vegetables are nice, especially if you have a pan or grill that will leave the grill marks on the veggies, that's always impressive.
Roast chicken with butter and herbs (and a little honey) under the skin is also really good and with stuffing/veggies and a nice golden skin that might be nice, but Im not sure that it would be very impressive. Im sure someone else will have better ideas!

Oh, your signature is so cute!!

Thanks, it's a nigella lawson recipe:

Mellow meatballs

For 4 - 6 people

3 x 15ml tablespoons of red curry paste
2 x 15ml tablespoons of vegetable oil
40 mini-meatballs - approx 600g total
1/2 teaspoon ground cinnamon
1 teaspoon ground ginger
1 x 400ml can coconut milk
1 x 400g can of chopped tomatoes
1 x 410g can chickeas, drained
1 x 350g diced butternut squash and sweet potato
500ml chicken stock (from a stock cube is fine)
2 x 15ml tablespoons honey
20g approx fresh coriander, finely chopped

1. Heat the red curry paste and vegetable oil in a large wide pan, when it starts sizzling, add the meatballs, turning them in the red oily mixture.

2. Sprinkle the cinnamon and ginger over the meatballs and fry for a couple of minutes.

3. Add the coconut milk, chopped tomatoes, and drained chickpeas. Stir in the diced butternut squash and sweet potato, then the stock and honey.

4. Bring to the boil and simmer for 20 minutes. Serve with rice and decorate each plate with some chopped coriander.

Is this a "trying to impress" dinner party or a just "friends over for dinner" dinner party? If it's just friends coming over, we usually just throw some steaks on the grill (or the broiler if it's winter) have baked potatoes and salad. And, of course, beer and wine.

Now, if it's fancier than that, chicken breasts are what I normally fix. The easiest is Italian chicken (basically, breasts smothered in italian dressing cook in a covered skillet on low for a few hours until they fall apart...simple but yummy!). I also have a receipe for curry chicken if you would be interested. I have to dig it out so let me know.
