2 delicious and healthy recipies

I just stumbled upon 2 decent pasta recipes that are fairly healthy - please feel free to add your own:

Pasta Salad -

The Smart Taste or something pasta that has loads of fiber and calcium -
elbow, 1/2 box
1/2 vidalia onion, diced
1 red or green pepper (could do both), diced
1 fist sized mozzarella ball, diced
1 TBL garlic, diced
1 pint or more or grape tomatoes, halved
1 med or more cucumber, peeled and diced
1 fist or less pepperoni, diced
1 small jalapeno, minced
4 small kosher dill pickles diced/minced
pepper
1/3 jar Newman's Own Low Fat Light Italian Dressing

and

Chop Suey

1 lb of lean hamburger
1/2 onion
(didn't have any sauce or tomatoes) 5/6 TBL of fresh Bruschetta
1/2 TBL garlic
1/3 cup white wine
1-1.5 Tsp Margarine
pepper
1 lb of healthy pasta

Both were both of these really good and we had tons of left overs. I liked the pasta salad because it was mostly salad and less pasta!

I have gotten excellent reviews on my pasta salad, everyone loves it and keeps asking for the recipes, not to mention its really cheap

1 whole cucumber slice into thin pieces
3 large tomatoes
1 block of feta cheese, usually this is 250g I usually buy the one that is 1% fat
1 large carrot grated
1 pack of fusilli pasta
1 Tbl of powder garlic, can use fresh if on hand
Salt
Lemon pepper or the pepper mix that you have to crush kind of thing
3 tbl spoons of Olive oil
1 jar of pesto sauce, if you make it at home its even more delicious
1 jar of olives dont throw out all the water, keep just under 1/4 of the water in the jar
1 tablespoon mustard
sometimes i add a hint of lime juice.

This is sooo good, everyone has complimented on it and have asked for the recipe, it just came to me spontaniously at work one day, because this lady had a salad and was saying what she added in it, and i though OHH this would taste soo good with a pasta salad. Really refreshing for summer.

Also for zucchini and eggplant, if you want a new alternative i learnt this from Jcat
Is to marinate it with salad dressing, tastes best with the clear kind like french dressing or Garden dressing. chop up vegetables stick in bag, add dressing and marinate over night, then grill it on the bbq.

You will not be sorry!

Also with zucchini you can quarter them and grill them. Oh and you can grill/steam them with onions in tinfoil on the grill too
