Favourite hot weather food?

What do you like to have for dinner when it's hot? I hate cooking when it's hot, and need some ideas. I like making things like quiche or lasagne, and eating it cold over a few nights.

Salads of all kinds from potato to greens to pasta to rice
Fruit especially nice cold watermelon

When I ate meat:
cold cuts
cold fried chicken
BBQ

Soup and sandwichs
Take out!!

Same. I love watermelon.

At the same time summer means grilling out and that means lots of fresh sliced home grown tomatoes...and corn-on-the cob. Dripping with butter, of course.

I love:
-peeled tomatoes with cucumbers & red onions marinated in olive oil & red wine vinegar with seasoned salt & season pepper, chilled.
- Jello fruit salads - either cottage cheese/Cool Whip with orange gelation, pineapple and mandarin oranges
or lime jello with pineapple, topped with cream cheese.
And watermelon for dessert, of course

AHHHH, summer - fresh peaches!grapes! apricots! Plumcots! nectarines! Zucchini!

I really enjoy pasta salads, raw veggies and dip, lots of fresh fruit salad and tons of popsicles..

I started making my own popsicles last summer out of Crystal Lite and just love the new Cherry Pomegranate flavor..

I love making a lassi; yogurt, water, ice cubes and mango with a bit of lime juice and dash of salt. It's refreshing and can be without the mango for plain, or other fruits can be used.

I'm always up for a cold pasta salad. Or spinich salad with boiled eggs and all the goodies.

Fresh mozarella, tomatoes and basil in a vinagrette dressing with a nice baguette.
And lots of cold beer (esp Leinie's Summer Shandy)

Add another vote for cold pasta lol

I love the way my mom (well and now I) makes pasta salad, but sometimes when I don't have all the "stuff" and/or don't feel like making it all, I will just cook and cool some elbow noodles and just throw on some cold italian dressing and have that

I also used to make tuna noodles alot (I think I overloaded in college and haven't made them recently lol): chilled cooked elbows, can of tuna, miracle whip, chopped green peppers and onions and various spices to taste... I usually make a big batch and eat it several times (Just add a little more whip after it's been in the fridge for awhile)

I also love the cups/jars of diced peaches in syrup - good healthy "dessert" and also cool

I made beef enchiladas on the BBQ today. Roasted the beef on the grill then shredded it and put them all together inside and put the pan back on the grill to melt the cheese. They were so good, they actually picked up a little bit of bbq flavor even though it was a gas grill!

Lots of salads, fresh fruits and veg. We BBQ lots in the warm weather, and cook indoors not very much. I try to do extra of whatever I do cook, either on the BBQ or indoors, so that there's nice stuff available for salads.

MMMMM.....salads! Love salads. This thread is making me hungry!

It's been in the upper 90's here in NYC for the past 4 days. The last thing I feel like doing is cooking.

So, yesterday, I got obsessed about gazpacho!! I bought all the stuff, and put it in the blender and had nice, cold, gaspacho soup for supper.

Tonight, it's the rest of the ingredients that I didn't use for the soup, and I'm making a huge salad. Greens, vine-ripened tomatoes, hard-boiled egg, green and red pepper, cucumber, scallions, and some chicken off one of those roasted chickens you can buy at the grocery store. I bought it this noon and it's been sittin' in the fridge, getting cold.

YUM!!!
