recipe for coconut cream pie?

My boyfriend and I go over to his parents house every Sunday for family dinner. Occasionally I will have them over to my house like this Sunday for a meet and greet with my new puppy Chevy (Iâ€[emoji]8482[/emoji]m not sure if I like his name, but he knows it so probably wont change it).

His dad loves anything coconut and his mom loves Dark Chocolate. I am making a spicy salmon dish with a Greek salad. So for desert I wanted to make a Coconut Cream pie (yummy the fluffy kind) and buy some really nice dark chocolates to just put on top as a treat.

So…. Since you guys make me drool half the time when you talk about your recipes do any of you know a recipe for coconut cream pie? Iâ€[emoji]8482[/emoji]m not a chef, my Mom cooked for me until I was 28 (ya I know… lol) and just started learning when I moved in with my guy. So nothing too complicated. Id be really thankful if you guys know any recipes.

The simplest recipe for coconut cream pie is as follows.

Make a crust of graham crackers crumbs, recipe on the box.
Buy a couple of boxes coconut pudding mix with about 1/4 less milk required for recipe...this make pudding thicker..
Pour into pie crust, garnish with lots of whipped cream and flaked coconut.

Very easy and very yummy.

You can make the pudding homemade with coconut milk, flaked coconut and cream also..Then thicken with a little cornstarch and water but the pudding mix is just as good..

Well, I'm a huge fan of coconut cream pie - but it has to be home-made. I have an excellent recipe at home so I'll get it to you tonight. I'm not really a fan of the pudding mixes - too many additives and preservatives for my liking personally. Easy though. When I was around 13 years old my mom was in hospital for cancer. I had to do the cooking (including making 4 loaves of bread every 2 days) for my 2 brothers, dad and my great uncle who lived with us, and cleaning of our 13 room farmhouse. I found this coconut cream pie recipe and was making it every night for dinner. Finally my sweet dad gently said, "Linnie, you're doing a great job of looking after everything but do you think you could find a recipe for another kind of pie?"


It will take you only minutes longer to make the filling from scratch - honestly and it will be better IMHO. Also I think it is important to ensure you get the right coconut - I prefer shredded rather than the dessicated. The shredded seems to be more moist and not all dried out. Also make sure you sprinkle some coconut over the meringue before you bake it.

LOL. Mmmm yummy! You guys are making me drool lol. Thanks so much guys. I love coconut cream pie, i think its my favorite. Im willing to try anything (well as long as its not expert level cooking)

Yep. That's how my mom used to make it too. I don't really care for coconut, but I do love banana cream pie. And you make that the same only using banana pudding and put a layer of bananas on the crust before adding the pudding on top.

Okay heres my recipe, go to the frozen section of walmart and buy the gourmet coconut cream pie! Oh soo yummy! Then buy a box of dark chocolates and top to your liking!

That sounds yummy but DH doesn't like coconut. Now chocolate or banana cream pie... yummy!

Now if anyone has a good recipe for cherry or strawberry cheesecake, I will be in heaven!

In a saucepan combine 3/4 cup sugar, 1/3 cup all-purpose flour OR 3 tbsp. cornstarch, and 1/4 tsp. salt. Gradually add 2 cups milk, mixing well. Cook and stir over medium heat until mixture thickens and boils. Cook 2 minutes longer. Remove from heat. Stir small amount hot mixture into 3 slightly beaten egg yolks; immeditely return to hot mixture; cook 2 minutes, stirring constantly. Remove from heat. Add 2 tbsp. butter and 1 tsp. vanilla. Pour into cooled baked 9 inch pastry shell. Spread meringue (3 egg whites) atop ie and bake at 350 for 12 to 15 minutes. Cool

That is the basic vanilla cream filling. To make this Coconut Cream Pie, add 1 cup flaked coconut to cream filling before pouring into pie shell. Top with meringue, sprinkle wih 1/3 cup coconut. Bake as directed until golden.

Meringue:

Beat 3 egg whites with 1/2 tsp. vanilla and 1/4 tsp cream of tartar until soft peaks form. (If you use a copper bowl you will not need the cream of tartar as the copper works with the egg whites.) Gradually add 6 tbsp. sugar, beating until still peaks form and all sugar is dissolved. Spread atop pie, sealing to edge of pastry.

This is unbelievably good and no store-bought pie will be able to hold a candle to it.
