hold a cat during the time I have to take them (I will be traveling with 2 cats) out of their carriers at the security table at the airport? They will be wearing collars (they have never worn collars before) only for this trip. I have bought 2 collars with a snap closure, but will they snap open if they try to get away from me?

I know a harness is the best option, but I will not do that as they have not worn anything in the past. Any other suggestions, or are the collars I bought o.k.?

Should I just put a towel around them and take them out? I am just so afraid they will run away!

A snap/breakaway collar is not enough - they open too easily and hte cats are bound to be stressed and to struggle. Is there no way you can get them used to harnesses before you travel? I always travel mine in harnesses, even to the vet - it makes it so much easier. If you can't, then a collar with a buckle, not usually recommended but IMO on this occasion the next best option. I would attach a lead to the collar/harness too, and keep it round your wrist in case they do manage to escape.

My cats were used to being handled and carried/held against me, tucked under my arm, so no problem going thru security. Put your hand around their front legs and chest and tuck under your arm. You might take your free hand and place on the scruff of the neck for extra holding.

You should be scanned (carrier only) in just a minute or two. You don't have to take them out till just before you send the carrier thru and then stand on the other side real quick and put the cat back in - be sure the carrier door is open.

The cat will jump in
