I like mine passed across a flame and still mooing! Steak is one of my favorite foods even though I don't get to eat it often. (Trying to limit red meat.)

I like my steak and roast beef rare or medium rare, guess I a bit of a carnivore at heart.

However I rarely eat steak, and only have roast beef a few times a year..

I have to add other. I do eat meat, but only seafood and fowl. When i was eating red meat i liked my steaks medium well done to well done (depending on who was cooking at the pub that night). I can't stand seeing people eat meat that is bleeding! EUGH!!!

When I was younger I always asked for my steak well done. Then one time a lovely gentleman took me out to dinner whereupon I ordered Filet Mignon - well done. He and the waiter looked at me like I was out of my mind. He refused to allow me to ruin a beautiful steak like Filet by having it well-done. I ended up having it Medium Rare and I've never gone back to well-done. Hubby actually prefers his even more rare than I do.

Most chefs (good ones) will get very shirty if people order their steaks well done. When I used to eat steak I always had it medium. Max has his medium-rare.

And it does taste so much better that way!

The best steaks in the world (IMO) come from the midwest. My dad was a midwest butcher. He would never allow anything more done than medium rare in the house and most of us ate our steaks rare. These days I tend to go a little beyond rare but not quite medium rare. Old habits die hard. It helps that the cheap cuts of meat that he brought home were usually porterhouse steaks. (yes, I'm a steak snob)

Oh, it has to be rare! Nice and pink and juicy. MMMMMMM!!! I used to eat it well done, but I did not even really like it. But my husband had me try it rare and OMG I can never go back!!

I used to order it as "just walk it through a warm room and I'm good." At a buffet joint I'd always tell them I still want it walking. Being pregnant I'm not able to eat steak that rare so I avoid eating steak as much as I can. If it cooks past medium-rare, I won't eat it. Hubby, on the other hand, wants his steak incinerated (sp) and changes some interesting colors when I would eat steak in front of him.

Not 'quite' as rare as I would have preferred, but it was sooooooooo yummy that I forgave that part!!! Tehehehe

I love Rib Eye steak the best, btw...soooo tender!!!
