Gigantic eggplants!

Well the lasagne recipe says i need 3 eggplants, but why buy three when your local supermarket has one eggplant big enough to serve the whole family?

According to the docket, it weighs 1.04 kilograms!!!!!

Well i'm chuffed. That's two less to chop!!

Do you guys sometimes find the oddest looking produce when you go shopping? (ie: rude carrots)

Usually larger egg plants are tough and bitter. Better to buy small ones.

Mmmmmmm...eggplant...fried with marinara sauce.

No, it was fine! I made a HUGE lasagna with it, tried some out before i divided and froze it for meals, it was great!

It was the quintessential gigantic but not ruined eggplant
