Just remember, I am the "love to cook" cat lover.

Tonight, I am making a new recipe, Risotto with Italian Sausage, Caramelized Onions, and Bitter Greens. It's from Cooking Light magazine.

But last night, I made the most delicious dinner.
It was a recipe from the new cookbook I am reviewing. It was meatballs with tart cherries over rice. One spoonful in and DH said that it was a keeper.

OMG! Another CL lover! I drool over that magazine each and every month when it arrives in my mailbox! And I don't cook thru the week, but I certainly do on weekends.

Let's share recipes! Should we ask for a special forum for that (sorry, I'm new and if there is already one I haven't found, please forgive)?

Anyway, back on topic, I had leftovers from Sunday night. I had stir-fried some broccoli, red bell pepper, mushrooms, and matchstick carrots and added some shrimp over brown rice. It was excellent both times.

Chocolate frosted yellow cake cupcakes.
My SO and I are junk food junkies. We decided to skip dinner and go straight to dessert.

I am making Roast Rabbit with Mustard Crust, couscous, and blood orange and onion salad.
I thought that rabbit was supposed to be peasant food. I almost died when the butcher rang it up and it was $25.00.

We just got back from Red Lobster. I had Shrimp linguine alfredo, fried shrimp, shrimp scampi, a baked potato, along with a casear salad and cheddar bay biscuits. I got a slice of cheesecake w/strawberry topping to go, I'll have that a little later. Yum!

No time for serious cooking tonight, so: sausages, leftover mashed potatoes in patties, whatever veg come to hand. It'll still be tasty and balanced, just not fancy.
