What to make with baked chicken?

I am going to bread some chicken breast tomorrow with oven fry to bake in the oven. However, I haven't really come up with any ideas of what to make with it. Anyone have any good ideas?

Mashed/whipped potatoes and a veggie and salad.

I prefer "whipped" potatoes over mashed. Add some milk, butter, salt, pepper, garlic and onion powder and some dill or chopped chives. You can add a bit of plain yogurt or sour cream too. Use an electric mixer and beat the potatoes until light and fluffy. Don't make them too runny, so start with small amounts of liquid because you can always add more

That's what my mom does with her mashed potatoes. We just had those on friday night...any other suggestions?

You can cut up potatoes (with the skin on) onions and tomatoes, toss with olive oil, garlic and salt and bake until potatoes are tender.

Serve chicken with rice and the potato,tomato and onion mixture with fresh bread.

A loaf of fresh french bread, put it in the oven at 350 or whatever temp your chicken is cooking, for 10 minutes before you eat to warm it up. And a bottle of wine, maybe.

As far as I'm concerned, if you have your bread, salad, and good beer or wine you're just about set. Sometimes that's all I'll have for dinner if I'm trying to eat light.

How about scalloped potatoes?

Thinly slice potatoes and onions.
Place a layer some potatoes and onions at the bottom of a casserole dish
Sprinkle some flour over the top, add a teaspoon of butter, salt and pepper
Place another layer of potatoes and onions
Repeat flour, butter, salt and pepper
Add more potatoes and onions etc.

Repeat until you get to the top. Tend with a layer of potatoes.

Mix 1 can of cream of mushroom soup, or cheese soup with 1 can of milk. Mix well. Pour over top of the potatoes. Cover and bake until the centre potatoes are cooked. You can tell by inserting a knife in the middle.

Depending on the size of your casserole dish, you may have to use 2 cans of soup and 2 cans of water.

Also, you can use any cream soup if you want. I just prefer the mushroom and the cheese ones for scalloped potatoes.

Something I have found that goes really nice with with chicken is Asparagus with lemon and butter.
If you don't want to go the traditional potato route, how about some noodles
with chopped herbs and butter....Sage goes wonderfully with chicken.

Or even just a large mixed veg salad with a zesty dressing..

That's how I do mine! A nice brown rice would go with your chicken as well.
