Basic cornbread recipe and doctored it up. Man is it yummy. Here is my recipe:

1 cup of milk
3/4 cup of cornmeal
1/2 cup white flour
1/2 cup whole wheat flour
4 tsp baking powder
1/2 cup white sugar
1 large egg
1/3 cup of vegetable oil.

Mix the cornmeal and milk together and let it sit.

Combine dry ingredients in a bowl and mix together.

Pour in milk mixture, add the egg and melted butter Mix well.

Pour into a greased 9 x 9 square pan and bake for 25 minutes at 400 degrees until a knife inserted in the centre comes out clean.

I doctored it up with the following:

substituted melted butter for the vegetable oil
added: 2 tsp of curry powder, 1 tsp garlic powder, 1 tsp of cajun seasoning, 1/2 green pepper (diced). I also sprinkled the top with cajun seasoning before baking.

I just make the old fashioned, poor folk/hillbilly kind of cornbread.
All I ever use is meal, about 1/2 to 1 cup of buttermilk, and a little water to thin it with. Sometimes I *might* add an egg to it.

Just mix it up unil it's smooth and poor into a greased, hot iron skillet and bake at 450" until browned.. Of course, you can use a bread pan or molds,too! And for variety, make the mixture a little thick and drop it into hot vegetable oil by the spoonfull and you don't have to worry about cutting it into servings!

I have a very basic cornbread recipe, but it requires an 8" iron skillet to be at it's best
. You can also use pyrex if you can't get an iron skillet.

1 2/3 cups buttermilk

1 egg

1/2 cup self rising flour

1 1/2 cups buttermilk corn meal mix (down here, it's with bagged flour at the grocery)

vegetable oil


Preheat oven to 450 degrees, with the iron skillet (with about 1/4" of vegetable oil in it) to preheat at the same time.

Mix ingredients well.

When the oven, pan and oil is heated, remove pan from the oven and slowly add mix until the pan is 2/3 to 3/4 full (stop adding mix before the oil in the pan runs over the sides). Discard any leftover mix.

Return pan to 450 degree oven

Cook for approximately 20-25 minutes (until top is deep golden brown).

I wouldn't ever make mine homemade, the boxes taste just fine to me!!!


I made it home made once and it was a PAIN!!!!
