What is everyone having for dinner tonight? I'm planning to make some homemade beef & barley soup
I have it in the crock pot cooking right now
I hope it turns out well- it smells amazing at the moment

Here's the recipe if anyone wants it:

2lbs beef stew meat (i trim off all the fat)
6 low sodium beef bullion cubes
6 cups of water
a ton of scallions ( i chop them finely- i LOVE them so i add a lot -if you don't like them you could use less!)
a pinch of chopped white onion
garlic
ground black peppercorn
spicy season all
bay leaf (3 of them)
nutmeg (only a small pinch
)
chili powder
ground cilantro (i was out of fresh parsley and cilantro- so i used the flakes)
parsley flakes
dill weed (i like a lot in mine!)
basil

once it's mostly done i'm going to add in some barley (i put it in the crock pot and let it cook in the beef broth!
) I use the instant barley so it cooks more quickly).

It's chilly outside so i thought tonight would be a perfect soup night
I can't wait for it to be done- i'm already dying to eat it and it's not even fully cooked yet!
I'll probably make some cornbread (not sure yet) and a salad to go with it!

What is everyone else having for dinner tonight?
