Just did this!
Here is what I made (much similar to what we normally eat, but only more of it, didn’t want to make too little)
Fresh tea iced with slices of lemon.
Red leaf salad with red peppers, cucumbers, purple onion, mushroom, fresh tomato, black olives, with a light Italian dressing.
Oven roasted red baby potatoes with Mrs. dash and olive oil as seasoning, brushed on before cooking. And either grilled salmon or grilled chicken, marinated in fresh garlic, olive oil, pepper, basil, and a bit of balsamic. Also a loaf of wheat bread.
Dessert, fresh fruit mixed with walnuts and low fat strawberry yogurt.
Sounds exactly like what we ate tonight too, only minus the roasted potatoes, instead had steamed broccoli and green beans with the bamboo strainer. Husband had ranch on his salad tonight with green olives. And we haven’t had dessert yet, but there is fresh cantaloupe in the fridge.
