I noticed last night Emmett's eye was runny. Tonight its pinkish and there was more gunky in it. He is also not opening it all the way. What could it be? What can I do?

Sounds to me like conjunctivitis aka pinkeye, which usually can only be treated after a vet visit and a round of antiobiotics. Only a vet can tell you for sure.
I agree! Maybe you could use a warm rag to clean the goo off to make it easier to open the eye until you can get kitty to the vet??? I would try to keep it as clean as possible just so it doesn't get worse! Good luck! Please keep us posted!
