I have Chicken Enchiladas in the oven right now, they are from the TCS cookbook
I made chicken enchiladas too - with extra sides of pico de gallo and guacamole, and green sauce made from tomatillos. Put some jalapeños in the sauce for the enchiladas to make it have some more spice and added cilantro on top.
Today, I did some major cooking. I made a BIG batch of marinara sauce. So, we are having mussels marinara, sourdough bread (not homemade) and endive and persimmon salad with homemade vinagerette. Anybody hungry yet?
