Colin is in charge of dinner tonight!
He's making snow crab legs, corn, english peas, and 3 cheese garlic toast to go with it
I can't wait till it's finished!!! What is everyone having for dinner tonight????

I made stuffed zucchini which is one of my favorites.

You need a fairly large zucchini to do it but I had a couple huge ones from my brothers garden.

You slice it in half, then scoop out part of the center, add sauteed ground beef, peppers, rice, and a mixture of cheddar and Parmesan cheese. Wrap the whole thing in foil and bake until tender.

It's yummy

As I sit here in the kitchen, John is making potato stroganoff... hamburger helper! I've been craving it forever, and he said I never cook it long enough...

ooooh... stuffed zucchini is good! The one my mom makes doesn't have meat though.
I'll have to find a way of making a vegan version of it though. That'd be yummy.

Last night I made a big pot of soup and I had it for lunch and dinner today. It's roasted eggplant, roasted red pepper and lentil soup. It's SOOOOOOOO good!

I had that with some nice bread.

I got a calzone from Italian Bistro when my appetite came back. It's gooood. Rob had a bowl of cereal. Neither one of us are big eaters when we are having a shitty day.

I had a "sweet bourbon" marinaded pork roast, steamed broccolli w/cheese and oven baked potato wedges w/sour cream and skim milk to drink.
