I would love to harness train Peace so I'm wondering what brand would be good(Lupine, etc), what kind (leather, nylon, etc) things like that.

The only one I recommend 100% is the Walking Jacket
I've had good luck with the Lupine ones.
I'd go with the nylon type, which is what we have (but don't use lol), because I avoid animal products whenever there is a good alternative.

No particular brand, but I use nylon Roman style dog harnesses.
They have an extra strap from chest-tummy which I find more secure than H or figure 8 harnesses, and sit in a V on the chest rather than around the neck.
