question about photoshop. nothing to do with sigs.

i was wondering if anyone can help me. i have a picture where i want to put everything in black and white except the flowers? i just wanna see how it will look on a wedding photo. i wasnt sure if i had to cut around the flowers first, then make the picture black and white then paste the flowers on to the modified SP? picture? or is there an easier way?
hope someone can help, thanks. i didnt want to post the picture as i wanted to try myself first.

I am from England but currently live in Yorktown V
I would use the paint brush tool do colour everything black and white except the flowers, when it comes to painting around the flowers zoom in and change to a small brush so you can paint the pixels around the flowers one at a time do get a clean deffinition of whats coloured and whats not....I am self taught on the photoshop so there is probably an easier way of doing this, but thats how I would do it!

I usually choose the select colour feature if it is one colour, or cut around them (use some feather to make it look more natural) then paste the colour selection over and make the original layer B&W

thanks everyone i ended up cutting out the flowers , then desaturateing the origanal to black and white then pasted the flowers on top. it didnt come out as good as i was hopping for but it worked . thanks again.

I think it looks great Tasha,
the only other thing I would do is adjust the contrast on the B/W
