While I was out Will made us vegetarian steak sandwiches (with Morning Star veggie meat) and corn on the cob, it was all ready when I got home and it was soooo good! Later tonight I'm going to have some Edy's Rasberry vanilla chip ice cream.

Last night I cut and seasoned some sirloin using sea salt, fresh black pepper and rubbed Italian herbs.

Today I skewered the meat along with red onion, yellow squash, garden mushrooms, and red bell pepper, then grilled it, brushing on a roasted garlic teriyaki sauce.

Yummy!

I went to an amazing restaurant in Bucks County. I had lamb chops with mashed potates and a carrot puree. Then we were really bad and had lemon cheesecake for dessert. YUMMM!!!!

We had hubby's mom and dad and his aunt and uncle, who are visiting from the Netherlands, visit us today so we went to Mandarin for their buffet. It was delicious.

I don't know what I am going to have for dinner tonight, seeing that I am working. Maybe either Subway or a Souvlaki. I cannot decide!

I am now going to ruin my healthy dinner by indulging in some low fat, creamy mint chocolate chip ice cream.

Oh man I had the best dinner!!!! DH and I were both working in a job that fed us 3 meals a day, so I haven't done a big shop in over 6 months...
Now that I'm not working though, I have to cook again (which is nice to get more vegetables and more control over what we're eating).

So today I went to the local fruit and veg market and got a heap of fresh veg, salad stuff and fruit, then went to Whole Foods and got a heap of meat. I thought I did pretty well given Whole Foods' reputation for being so expensive. I got a heap of simmer sauces, tomato based sauces, and Asian noodle type meals, and instant noodle type stuff for lunch, and also a heap of meat. It should last well over a couple of weeks and only cost $100 which I thought was good for healthy, organic tasty food!

And I'm much more likely to cook healthy food for myself while DH is away if I'm inspired by it. And I'm less likely to get bored of cooking when DH gets back if I've got lots of yumy things to try!

Anyway, so dinner tonight was lightly crumbed, seasoned trout, olive oil and garlic couscous and steamed veg, with fruit salad for dessert (made with fresh raspberries, strawberries, blueberries, grapes, and pineapple). It was all soooooo good and I have so much fruit salad left over for the rest of the week
