We haven't had one of these threads in awhile.


I am having a turkey lunchmeat sandwich (wish it was real turkey it'd be more tastier!
) with a little mayo, mustard, mozzerella cheese, and cucumber chips on white bread. it's so good.
and a small glass of soda.
so what is everyone having for lunch today?

I think Im going to have a ham sandwhich. I was going to have hot dogs but I ended up feeding them all to a feral cat that has taken up residency in the wall behind my fire place!

I had a Smart Ones frozen dinner... it was roast beef in portobello sauce with broccoli and cauliflower. And I also warmed up a couple small pieces of leftover garlic bread from last night.

I made tortilla bake and yellow rice!
It was awesome


ingredients:

1lb lean ground turkey (or whatever ground meat you prefer)
taco seasoning
1 can fat free refried beans
1 can minced black olives
1 package of cheese
1 jar of mild (or medium) Ortega taco sauce
4-6 flour tortillas depending on how many layers you make


recipe for the tortilla bake:

brown lean ground turkey in skillet, drain, add taco seasoning.

in a round pan put one flour (or corn- whatever you prefer) on the bottom of the pan. Then add refried beans (i use fat free). Then add the meat, then black olives, then cheese, then drizzle some taco sauce on top- then add another tortilla (repeat the layers till you have what you want!!!)

put it in the oven at 350 for 20-30 minutes until it's done- right before you pull it out- add another layer of cheese on top of the top layer tortilla and let it melt- then it's ready to serve
I also make yellow rice to go with it

I cooked up a steak and chips in the pan (made the chips myself) with rosemary & garlic butter
