I can't sleep and nothing much is on TV so I decided to bake. I'm making "Butter Chews". Pretty easy recipe, but requires so many bowls!
3/4 C of butter (salted because there is no salt in this recipe)
3T Sugar
1 1/2 C flour
2 1/4 C brown sugar
3 egg yolks beaten
1 C nuts (I use chopped walnuts)
3/4 C shredded coconut
3 egg whites stiffly beaten
Cream butter and white sugar together, add flour. Press into a greased 8x12 pan. Bake at 375 degrees for 15 minutes.
Beat egg yolks, add brown sugar. Combine. Add nuts and coconut. Combine. Set aside.
3 minutes before the pastry is done, beat the egg whites until they form stiff peaks. Fold the egg whites into the nut mixture. Don't over stir.
Pour over pastry.
Bake at 350 degrees for 25 to 30 minutes.
Makes 2 dozen 2" bars.
