Mmmm... I haven't checked in much here lately because I'm waiting till after my wedding to start again. I'm not binging or anything bad just maintaining so that my dress isn't too big.

I did hear some words to live by yesterday though. On Take Home Chef, Curtis (the chef) was cooking for a very thin girl and said something to the effect of "You probably don't eat alot do you?" Her reply was "I eat often." and I think thats my missing key. I did a fad diet once that involved eating at least 4 times a day and I noticed I never ate as much so thats something I'll impliment post-wedding.

My pesto is fresh basil, parmesean cheese, pine nuts, and olive oil... I've been trying to think of a way to cut back on the amount of oil used to make it a lower fat/lower calories sauce.
I love my pesto, but I don't ever get to eat it if I'm being healthy.

Oh, key to pesto is toss it in a food processor or blender.

Pine nuts can be a little expensive. You can skip the pine nuts, although personally I like them pretty well.

I've been thinking of getting soy nuts as like a snack type thing. Very high is protien and low in fat! Also, what are the thoughts on tofu? I'm scared to death to try it!

Tofu takes on the flavor of whatever it's cooked in. Tofu by itself, imo, is rather boring, but quite good in things like General Tso's tofu.. in fact, I prefer it to the chicken.. um.. also quite good in Indian dishes, since they're spicey. Don't eat it plain, cook it in something. I like it, though. It's a little spongy, but.. um, if you've eaten Indian food and have eaten that cheese that they make some dishes out of, to me it's a lot like that.

I tried a tiny little piece once in some soup at the chinese place. It was... OK.. I think I may try it in something spiceyer. More flavor. Do they or can they put it in chili, is that something normal or freakishly wierd?

We walked 3.5 miles again tonight. Tuesday I had to walk by myself and I went and did the hill again, I did a real brisk walk and hoofed it down there and back and kept up speed on the hill too! I felt reall good after that. I've been working this week on making sure I keep my protien intake up. I bought a cereal that has 9 protiens in it even before you add the milk and it's quite yummy! Also very high in fiber and whole grains! Both pluses!

Um, I'm sure someone puts it in chili, but I haven't personally seen it. Definitely go with something spicy/saucy, though. I wouldn't think soup would have a strong enough taste to offset the blandness of tofu.

Definitely try General Tso's tofu if you like General Tso's chicken. It's really good..by far one of my favorite tofu dishes (not that I've tried a ton or anything).

.... can be modigfied to nearly every diet as I now enjoy it over rice

Never had General Tso's Chicken... do you have recipie?

I'd love to hear it! DH loves mexican food and if I could sneak some in that would kill two birds with one stone!

Yep, sure do have a recipe... I open the phone book to the page that Mei Wah is listed on, add 10 numbers to the phone, discuss the recipe with the General Tso's expert on the other end... and then add a bit of cash.. hehe..

We probably do have a recipe around here somewhere given that my sister has four shelves of cookbooks but I can't guarantee the taste since we've never made it here. If you like, though, I can look one up for you.

Y'know, all this talk of Chinese food made me remember something I used to make years ago. I can't have it anymore, because rice isn't good for diabetics -- but I thought some of you might like it.

Disclaimer: I know nothing at all about Chinese food -- I just invented this one time when some water chestnuts showed up in my house. So here's a Scots/Irish girl's contribution to Chinese cuisine...



Cook some white rice and set it aside to drain.
Stir a very tiny bit of butter in the bottom of a skillet or wok.
Toss in some sliced water chestnuts to sautee until they're brown on the edges.
Add the cooked rice and toss it, keeping the heat low.
Cut a sweet onion in half and scrape the cut surface with a paring knife to create a sort of onion pulp; add in and toss.
Add a tiny touch of celery salt.
Toss in some parsley for color.
And if you have a lemon on hand, a little lemon zest is wonderful in it!

I need all of the moral support that I can get. Since I've been off work with health issues I have packed on so much weight
and it's only making my health issues even worse.

So I'm going back on my Jenny Craig plan, but I'm combining it with a Slim Fast shake per day so that I can get my chocolate fix. I love mixing a Slim Fast chocolate shake with 1/2 cup of frozen berries or a banana and adding a tray of ice cubes and making an ice smoothie!! So that will be my breakfast/lunch.

I've been on a cooking binge the past 2 days making meals and freezing them into single portions so they are ready to heat and serve with just the need to add a salad or dinner roll. Two more dishes to cook and I'm set.

Exactly how does this work anyway? Do we have a weekly "weigh in" and progress report?

It is kinda on your honor and support group not a weigh in or progress



On my own note I need a smaller swim suit

Welcome aboard, Natalie! We just sort of "dish" here, talk about what we're having problems with, talk about what frustrates us.. pretty much do whatever you want, brag that you're on track.. it's sort of like a "journal" to me. I try to post what I've done or haven't done, and how my "weigh-ins" are going through Weight Watchers. Lots of people post recipes, or things that they find helpful... we did have a goals thingy going, but we sort of lost it somewhere. You can post a before/after picture if you'd like, tell us your story.. whatever you like!

WOOOHOOOO!!!! Go Sharky!! Awesome job! You're going to have to go take bikini photos for us soon!

That sounds pretty ok, though not enough protien for me so it'd need some changes but that would be easy!

I hope that it all goes well for you. Yeah, for me it's just like having someone to talk to when things are going rough or you get a little peeved or when you just feel like you are on top of the world and want to share it!
