Homemade Pesto is wonderful... but...

It's POWERFUL stuff! Wow, it's making my whole apartment smell like basil and garlic!

I made some last night, and I can still smell it today. Here's the deal though, now that I've made it; I'm never going back to the jar.

Do you think it will freeze well? I'm thinking about making a huge batch this weekend and freezing it so I can have it when ever I want.

You can definatly freeze it. Just make sure you have all the air away from it and it should keep quite nicely. Fresh pesto sound super yummy now too.

You can techincally make pesto w/ any combination of fresh herb, nut, oil and usually parm cheese. Just mix it all up in the blender of food processor until it's a nice think (but spreadable) consistency. Traditional pesto is made with Basil, Pine nuts, Olive Oil and Parm.

I love sun dried tomato pesto! I sure miss my Trader Joe's - they made the best I have ever had. They also make a fabulous squash ravioli...the combination was too die for!
I would love both your recipe and the pesto recipe - of course, I will have to save points for this!
