I have never cooked a whole chicken, other than boiling it down for stock.

Tonight I roasted one, OMG!

I stuffed the cavity with onions, garlic and half a stick of butter.
Rubbed the entire bird with Italian herbs (oregano, basil and cilantro), dropped what potatoes would fit around the bird and covered it.
I cooked it for 90 minutes like thet then pulled it out, rubbed it with the other half a stick of butter and cooked it uncovered an additional 30 minutes.
Pulled it all out of the roaster and made gravy with the juice from the pan.
Oh my!

I love not using recipes

I only really started cooking 4 years ago.
Never really had what I would call a kitchen before then.
I mean, I would make things from boxes and fry eggs and that's about it.


I have always been one to watch my stepdad (the cook in the family) as he prepared meals, I was amazed at how much of his style of ad-lib cooking stuck with me.
