Well, it is my wonderful DH's birthday today - he has the afternoon off work, but I have been working long late shifts all week. Bless him, he is a hero - when I got home tonight, he had cooked dinner (Bacon, mashed potoato and veggies)fed the cats, fed the kids, hung out the washing and poured a glass of wine for me!!!


He is toooo good to me!!!
I feel so bad that he did all this on his own birthday!!

Lucky yous!

I havent had time to cook lately, infact i havent cooked since last weekend

I am on a diet, and today i was complimented that ive lost weight since the 1st of march so i feel happy. Nw my pants are looser than before so i guess its working although my scales says i weigh more which could be due to muscle building up!

Anyway.. My dinner was... at 5:30 a roll and at 9 pm a necktarine, I cant eat while teaching!

I'm donig that Slim Fast thing.

I usually only have one shake for breakfast or lunch and then have a normal dinner. But today I didn't feel like eating so I had a Slim Fast shake for dinner. But not just any shake!

I put a tray of ice cubes in a blender, added about 1/2 cup of frozen berries, 1 cup of the Slim Fast that I have mixed and ready to use, 1/2 cup of lactaid skim milk. Then I ran it through the blender to chop the ice and berries and pulverize the fruit seeds. YUMMY! And only 260 calories or so. It gave me my nutrition, satisfied my hunger and craving for chocolate.

Tomorrow I plan on having grilled chicken breasts, rice and some veggies. Chicken is thawing in the fridge.

yumm!!! I am doing the slim fast thing also, do you use a can of the slim fast or the mix that you have to make?

I have been buying the large tins of powder and mixing up a batch of 6 shakes in a covered pitcher. Then all I have to do is shake and pour. Much easier than mixing each one separately, and much cheaper than buying ready made cans. Better for the environment too. Plus this way I can use Lactaid milk so my tummy doesn't get upset.

It's just 6 cups of milk and 1 1/2 cups of the powder. I use a hand blender to mix it all together because the powder is hard to incorporate at the best of times.

Before pouring out a serving, give the contents of the pitcher a good shaking or a stirring because the powder tends to settle on the bottom.

To make my version of the shake, simply measure out 1 cup of the slim fast, add 1/4 to 1/2 cup of extra milk. In a blender add ice and chop. Add frozen fruit or a banana, add the liquid and chop, frappe, and whip until it's all nicely blended together like a slurpee or an iced drink at one of those fancy shops.
