I made this banana/fruit/nut coffee cake not long ago. The black stuff on the top is actually fruit/nuts/cinnamon/brown sugar..NOT charcoal..because it is a MICROWAVED cake!
i threw all the stuff into the bottom of the tin so now it's upsidedown with all of it's smelly loveliness.

(it tastes better than it looks, believe me)

BTW to tie this in with the stress reliever thread...my friend would bake to relieve stress.

Ooh yes that's a good idea. I must add that the reason i didn't use the perfectly fine over is that it is really hot weather! It only takes 12 mins on medium in the mircrowave as well

im another aussie just living on the otherside of the world


My australian colleague came over yesterday and brought me cake, coffee, strawberries and whipped cream!

wouldnt you just love some of these cold strawberries on such a hot day??

Ooh well i suppose i could. Considering it isn't my own recipe lol. (tsp-teaspoon tbs-tablespoon)

-1/4 cup oil
-1/4 cup milk
-1 egg
-1 banana mashed up
-1/2 cup brown sugar
-3/4 cup plain flour
-1/2 cup crushed nuts
-3/4 tsp baking powder
-1/4 tsp salt
-1/4 tbs baking soda

Topping (i put all this stuff into the bottom of the baking dish first instead of sprinkling it on afterwards as you're supposed to do. that's why it's all sunk into the cake)
-Cinnamon (as much as you feel)
-1 tbs butter
-2 tbs flour
-1/4 cup crushed nuts
-1/4 cup brown sugar


Just mix all the ingredients together. Spray or grease a microwavable container, i used the ring one, it cooks the centre quicker. Put everything in and cook on Medium for 12 minutes. Now in the recipe it says 8-9 mins, but i did 8 and the centre was still runny, so i did another 4 and it was perfect. Once the cake is cooled, tip it upside down onto a plate or cooling tray and sprinkle your topping onto it. (i assure yours will look better as i did it wrong on the first try lol)

Sorry i didn't do ounces and things, i only know aussie metric lol.

You have to tell me how it goes

aww thanks.........umm I think I have a measuring jug that has the 'cup' measurements on.............fingers crossed, cos it sounds absolutley scrummy
