Chicken salad recipes?

I wanna make some chicken salad, and I have had some before with apples in it, but I have never made any that way.

Does anyone here have any chicken salad recipes?

Are you looking to make chk salad for sandwich filler (ie. like tuna salad)?
Or more like a warm chicken salad on a bed of greens?

I make a chicken salad with apples. I don't really have exact amounts that I use but the ingredient list is as follows:

Approximately even amounts of:

Cubed cooked white meat chicken
Tart apple cut into pieces (I like Macintosh apples)
Red grapes - cut in 1/2
Thinly sliced celery
Romaine lettuce pieces

add some pecan pieces and mayo to glue it together

This is good as a stand alone salad, wrapped in flat bread or eaten on regular bread. This makes a really nice summer dinner salad.


I also have a yummy hot chicken salad recipe:

2 cups cooked white meat chicken - cubed
1 cup celery chopped
1 bunch chopped green onions
1 cup slivered almonds
2 cups shredded swiss cheese
1 package toasted croutons
8 oz mayo (+/- to taste)
2 tablespoons worchestershire sauce
1/4 teaspoon garlic salt

Lightly mix all ingredients except 1/2 cup swiss cheese. Place in baking pan sprayed with non-stick cooking spray. Cover with remaining cheese. Bake at 450 degrees for 20 minutes, until bubbly. Enjoy!

I got this one from Epicurious. I haven't made it myself, but it got good reviews. One viewer said to cut back on the vinegar.

4 cups cubed (1/2 inch) cooked chicken (about 1 3/4 lb)
1 cup walnuts, toasted and chopped
1 celery rib, cut into 1/4-inch-thick slices (1 cup)
2 tablespoons finely chopped shallot
2 cups halved seedless red grapes
3/4 cup mayonnaise
3 tablespoons tarragon vinegar
2 tablespoons finely chopped fresh tarragon
1/2 teaspoon salt
1/2 teaspoon black pepper


I often make a chk. salad like this (but it may not be what you're looking for)

Cooked chk
salad greens
portabello mushrooms
red peppers
red onions
black olives, optional (fresh, not canned)
walnuts pieces, optional
Olive oil
garlic clove chopped up

Dressing:
1/2 olive oil
1/2 wine vinegar
salt and pepper
a bit of parmesan
chopped herbs if you have them

I fry the peppers, portabello mushrooms, red onions, walnuts, garlic and olives in olive oil until everything looks cooked (not over-cooked, just not raw).
I then put this stuff on the greens. I slice the chicken length-wise and put it on the greens, etc. Then I pour on the dressing.

Depending what I have in the fridge, I mix it up a bit. I even make a salad similiar to this with grilled fish and a soya&sesame and veg. oil dressing. For the fish salad I wouldn't put the olives in and would substitute the portabello mushrooms with button mushrooms.

Them sound good too, my husband would like that, he loves mushrooms, I don't like them myself. And we love to eat fish too.

I think she is in one of the Carolinas, but that don't help me none, she could be across the street for all I know.

She's got a restaurant in Savannah Georgia that is SO GOOD!!

You usually have to wait for quite awhile for a table but it is so worth it!!

That's what I was going to say. My brother and his wife have eaten there and say its EXCELLENT. Its called Lady and Sons, and there's a cookbook by the same name that my mom bought me for Christmas. I haven't tried any of the recipes yet.

I wish you hadn't mentioned Chicken salad now I have to make some, and I only like it on Sourdough toasted, I don't put anything in mine but Breast meat Celery & mayo salt & pepper so its very easy and very good.
Thank you BB you got me on the Grape Babies and now the chicken salad

It would be good if I didn't have to get dressed put my face on and go get the dam bread


Oh and I can hear Nascar from my house it's only about 2 miles from me tried to get a picture of the flyover I heard the planes just didn't see them, kinda over cast here....

I ended up making some chicken salad with apples,sweet onion, and chicken, and mayonaise. It is very good.

And I am glad that you like the grape smirnoffs too.

And me and Neet and Dave and Jimmy and Mark are coming to your house so we can go to the race, I can walk two miles. Even when I am drunk.

Someone else besides me wil be driving, one of the above mentioned people know how to get places, I get to hold the map.

But only sometimes, sometimes my husband gets mad at me and takes the map away.

I see you already made the chicken salad...I hope you liked it!

I do make "Waldorf Chicken Salad" for croissant sandwiches occassionally, that is easy and cheap to throw together.

3 cans of chicken breast meat, drained.
3-4 T of mayo
1/2 of a tart red apple
A bit of chopped celery
1/2 cup of green grapes, sliced in half
1/4 cup of walnuts

This is good stuff! You can add more apple, grape, mayo, etc. to taste...however you want it. It's GREAT on the croissants.
