Things to do with Leeks

Leeks!
They're sooo yummy! So last week when I decided to make a roasted vegetable mix to go with some meatloaf I bought some leeks. Leeks being as expensive as they are, I only used one, so now I have enough to make something really special!
Normally I make soup (my brocoli/leek soup rocks, as does my butternut squash soup) but I'm kind of bored with my recipies. Any frantabulous ideas?

Yes, it's a soup recipe. But it's SOOOO good, and served in a bread bowl...great for company!

POTATO LEEK SOUP

3 leeks
4 potatoes, quartered
1/4 cup butter
1/2 cup milk
1/2 cup light cream
1 qt. water or chicken stock
1/4 teaspoon fresh chopped chervil
2 T each chopped celery and shallots
1/8 teaspoon celery seed
parsley to garnish

Peel and quarter the potatoes.
Prepare the leeks by removing the green portions, reserving for another use if desired. Cut down the center lengthwise and wash thoroughly. Chop the white portions finely and sautÃ[emoji]169[/emoji] lightly with the chopped shallots in half the butter for 5-7 minutes. Add 1 quart of water or chicken stock, 1/2 teaspoon of salt, celery, the quartered potatoes, and simmer 20-25 minutes. Remove potatoes and leeks to a small bowl, reserving using a potato masher, mash to a puree in return the puree to the cooking water. Stir in the milk, cream, and remaining butter, reheating one minute if needed. Season to taste with salt and pepper. Garnish with parsley and croutons.

Sorry, my mind went to the gutter when I saw the thread title.


I love leeks - I remember when I was a teenager, I would make leeks in white sauce. Now I can't remember how to make that! Bugger! But the potato and leek soup sounds good - I will have to copy the recipe!

My dad has the BEST recipie for creamed mushroom and leek soup...it's making me drool just thinking about it, but it's soooooooo fatty that I can't bring myself to do it.
Next time around I'm putting in a bid for a naturally high metabolism!

Yup - Potato Leek Soup is great.

Served cold it is referred to as Vichyssoisse, served hot it is called Potage Parmentier.

It's easy to make and a treat to eat.

I'm a little hesitant, since the potato soups I've had in the past have been sooo bland.

it's a vegetable that is white on one end and green on the other. You eat the white end...it does sort of look like a giant green onion...it tastes like mild onions and garlic put together though, and I ADORE the texture.mmmmmm

Leek and Olive tart

use your fav pie crust recipe and line a 10 inch pie dish

crumble feta cheese in the bottom
saute sliced leeks in a pan in olive oil till limp
add leeks to shell
add pitted kalamati olives
add a sprinkle of rosemary
mix cream or half and half beaten with three eggs....
salt and paper to taste
pour over top
Bake at 350 degres for about 35-40 minutes until custard is set.
let cool a little and then serve w a salad.

Wow...that is one nice recipie. Is there a certain amount of cream, leeks, olives, etc that I should use?

fair enough
that means I get to put lots of olives and leeks in there (mmmm...I love olives and leeks)
Maybe I'll get some nice bread to go with that too.
Any suggestions on a salad dressing that goes well?

Potato and leek soup is not bland, especially if you add a handful of parsley! And I love leeks in cheese sauce, with or without ham added.

Clean and score the leeks down one side, but leave them whole, and biol them for around ten minutes till just getting soft. If you like you can then wrap each one in a slice of ham, then lay them in an oven proof dish. Make some cheese sauce with either cheddar or gruyere cheese, pour over the leeks and sprinkle bread crumbs on top. Then bake in the oven for about forty minutes till the crumbs are brown and the sauce is golden on top. Delicious!
