As for your chicken, why not make dumplings?
They're super easy, just biscuits plopped into the soup.

I got home late from work and DH was tired so we just ate chicken strips and hashbrowns.

I made some tortilla soup this afternoon-- its in the crockpot finishing up cooking! cant wait to start eating it! Hubbys already chomping at the bit for it!

My chicken and hashbrowns were yummy! And to top it off, I had a bite of chocolate for dessert

We've got a lamb roast in the oven! We've got 3 lots of neighbours coming around for dinner, and they're bringing cheese and crackers, side dishes, dessert and wine.

Yummo!

I was planning on making one of Brian's faves. A casserole that is SOOOO unhealthy. Consists of ground beef, pork and beans, barbeque sauce, sugar and spices, with a biscuit topping. It's oh so good though!

Mmmm... I actually have some homemade chicken tortilla soup in the freezer. I could defrost that instead...

A spinach baby salad with fat free italian dressing, garlic & herb crumbled feta cheese, and garlic & cheese crutons. Pineapple, french bread, and water

Chicken and veggies stir fried with Thai curry sauce, over Jasmine Rice. Augmented reruns of last night's fruit salad for dessert.

I has mesclun salad with vegetarian "chik'n" strips, frosted pecans, and dried cranberries. And an apple.

Lunch is usually my main meal of the day. Today I had pasta with puttanesca sauce and a chocolate chip cookie.

I ended up cooking a meatloaf of sorts, with a bean/dijon mustard/brown sugar sauce. I'm also making french style green beans and biscuits. It's in the oven now and smells SOOO good.
