I grill my chicken on my George Foreman and toss it into the food processor to tear it up.

In a bowl I mix:

8 oz sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 cp shredded cheddar or more depending on my mood

1/4 cup or so chopped broccoli

Then I mix in the chicken too.

I crush 1 sleeve of Ritz cracker and put them in the bottom of a square casserole dish. I pour in the mixture and top with another sleeve of Ritz. Slice some butter on top and bake at 375 for 25-30 minutes.

Hey that sounds good I have never had a casserole growing up in NY, the closest thing would be Lasagna or Baked Ziti! But casseroles are big here in KY so maybe I will try this!

If you bought the most recent TCS cookbook my recipe is in there. I love it. My sister makes it too but she does it with cubed chicken and cubed Velveeta. Both are good.

Sounds good - I'd substitute Cream of Celery for the Cream of Mushroom soup though - allergic to mushrooms! Rats - and I used to use them in almost everything!

I made this rather bizarre skillet potatoes o'brien-scrambled eggs-sausauge concoction. It was actually pretty good...hubby and son snarfed it up, so it couldn't have been too wierd.

Our supper last night was quite a bit better...we had a ham with apricot glaze, mixed steamed veggies, and scalloped potatoes. It was yummy!

However, whoever was making that stuffed cream cheese chicken with spinach and whatnot thingy can glady Fed-Ex the leftovers to me!

Not ready for more poultry just yet, thanks. Spaghetti wins.

And here it will likely be spinach and cheese ravioli with garlic prawns in a rose sauce. Won't take long to put together after Rob gets off an 8 pm conference call.

Sounds almost like my reciepe I submitted to the cookbook! Instead of Ritz, I use Stove Top Stuffing
I think I might have to make it tomorrow nigth for supper, its been forever since I've made it!
