What's for supper

I had breakfast for supper. I didn't put my chicken down to thaw in time so I wasn't sure what to make and then I simply got up and asked dad if he wanted some bacon and he said yes. And the thought of hashbrowns come to mind so I put some hash browns on the stove too. And I decided to make some biscuits and scrambled eggs and when I was almost done dad decided he wanted some gravy to go with it all. So now I am so full but it was soooo good.
Oh and I baked some brownies this morning fudge walnut and I put marshmellows on top of it.

My plan tonight is what my husband refers to as "boy food". Growing up there were two casseroles his mother would make that included ingredients like ground beef, pork and beans, brown sugar, and bbq sauce. I'll probably make one of those with some veggies on the side.

probably leftovers. i'm wrapping presents at the moment, so i'm not going to bother with cooking dinner tonight

I have a meatloaf in the oven. It's the best meatloaf I've ever tasted!!!

1 medium onion, diced
6 slices of bacon, diced
2 cloves garlic, minced

Sautee in a frying pan until very lightly golden (not burned or crisp). Cool slightly.

1 1/2 pounds of ground beef
2 large eggs
1/2 cup uncooked rolled oats
1/3 cup grated parmasean cheese
4 tablespoons white horseradish
1 teaspoon worchestershire sauce (optional)
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon dill seed
1 teaspoon dried thyme

Mix everything together, add onions, garlic and bacon. Mix really well.

Pack in a 2 litre glass loaf pan.

Mix 1/3 cup ketchup and 2 Tablespoons of brown sugar. Spread on top.

Bake for 90 minutes at 350 degrees.

Let stand 30 minutes before cutting.

I had grilled salmon, boiled Yukon Gold potatoes and steamed asparagus.
