Low/No Sugar Cookies?

The radio question of the day reminded me. I made cookies last week and brought them to work, but I felt bad because my boss is diabetic and couldn't have any. My dad is diabetic too so I thought I would make a batch of low/no sugar cookies and give them to both of them. Anybody have a good recipe?? I'm at a loss.

I've heard of the oatmeal raisin using applesauce before. Seeing the recipe jogged my memory. I think I'll try a variation of that. Thanks again!

I don't know how to make any low calorie cookies, in fact I don't know how to make ANY type of cookie for that matter. However, I have puchased low cal cookies from the grocery store, and they are all good. I don't really notice the difference between sugar free cookies and the regular ones, except that they tend to cost more.

I totally agree with you on that last part Hope. I could just go to a bakery and get some, but I know my boss and my dad really enjoy homemade things. Plus I think cookies are fun.

Splenda comes in sugar for baking (check the grocery aisle). B Is diabetic and I try to use it instead of regular sugar when it comes to baking if I can.

Also one of local grocery stores have a little section for diabetics with Sweet and Low boxed cooking. There are cakes, cookies, chocolate Mousse, etc.

There is a chef locally that does recipes makeovers. This week it was cookies. She switched the white sugar to brown sugar and reduced the amount by about 2/3's!! They do not flatten out but will stay more like little lumps. One could flatten out with your fingers though.
