What to do with those left over mashed potatoes

Make my gram's recipe for Potato Croquettes

Unfortunately, my gram's recipes do not always come with quantities...so, experiment a bit with this.

Either boil potatoes in their jackets, or use mashed. If boiled, let cool - but peel and use a potato ricer on them while slightly warm.

If already mashed, put through a potato ricer.

Add 2 eggs beaten, 1/2 cup grated cheese (I assume romano), salt and pepper to taste, and chopped fresh Italian parsley.

Mix well.

Roll like long meatballs, then roll in 2/3 cup of breadcrumbs (I use Japanese Panko bread crumbs), and fry in hot oil until golden brown.

These are DELICIOUS & were a favorite of my father.

Mashed potatoes are so great for potato cakes - and yummy!! Nothing like fried up potato to get the taste buds going!
Makes me hungry right now!

Mmmmmm sounds yummy! Now I just have to make mashed potatoes so I can have some left-overs to use up.
I've gotta ask though; if they're already mashed, why are we putting them through a ricer again?

Another great recipe for left over mashed potatoes are those snowball "cookies". all they are are mashed potatoes are those 'snowball cookies'. They aren't really cookies. They are balls that are rolled in melted chocolate and then coconut.

I think it gives it a finer texture - you don't want to have lumpy mashed when making this ;-) But then this is the only recipe I use a ricer for, so I'm not the best one to ask!

You remember the other day I said your sig reminded me of one of my Rainbow Bridge cats? Here is his picture. It's the only digital photo I have of any of the cats I lost in the fire. I only have this because it had been uploaded to a hosting site. I wish I had uploaded more.

My goodness, he looks like Frankie's twin. She was thinner when we first rescued her, but looked almost exactly like him. aw...what a sweetheart.

I would use it on the top of a shepherd's pie. It's a big hit with everyone, even kids because I serve the veggies separately, so the picky ones don't have to have them "touch".

Think my pan wasn't hot enough so the oil made them a bit wet!


I'm having another go tonight and hopefully they will come out much better!


Do you think it'll still work if my mash is made with potatoes and parsnips?

I make Sheppards Pie with them too. Usually we have just the normal corn/potatos/meat combination. Well I found a great recipe that takes it up a notch a bit. The only difference is that the potatos are now mixed with I think 1 cup of sour cream and the meat is mixed with tomato or spaghetti sauce. You layer the potatos first, then the corn, then the meat. Then you take I think 2 cups of instant biscuit mix mixed with 1 cup of milk and pour it over the top. Bake at 350 for about 40 minutes. *drool*

^ That sounds really nice, but it's not like any shepherd's pie I've ever seen! Stop messing with English cuisine, it's not as if we have that much to boast about in that respect

I'm not sure, I know mashed parsnips have a different consistency. Sorry the first batch turned out soggy, hope this second batch turns out perfect for you!
