I made "cauli-flied Rice" with sausage and chicken, it was outstanding! It's a low carb as it's made with shredded cauliflower and NO rice, but tastes just like the best fried rice. Yumo as Rachael Ray would say.

For a veggie, baby brussel sprouts (which dh tried cloudberry vinegar on and said it was an excellent use of this special vinegar).

Brian had more of an appetite last night than I expected so I made plain cheese ravioli, tossed his in olive oil and sprinkled parmesan cheese on top, and put a little tomato sauce and parmesan on mine. It was a hit AND it didn't make him feel sick.

Last night I didn't have much time before I wanted to hit the gym because I had church choir practice last night, so I had a Lean Cuisine, turkey mediallions and linguine in a sun-dried tomoto sauce. Lean Cuisine has the best frozen food if I don't have time to fix anything.

Tonight I'm having salmon fillets marinated in Newman's Own Sesame Ginger salad dressing. I'm going to grill them if the weather stays nice. I'll probably steam some broccoli and pull one of my homemade rolls out of the freezer. I almost always have a big salad with dinner (and lunch) too. My indoor hydroponic garden that I got for my b-day is ready to be harvested again. It's growing salad greens. So I think it'll be a good dinner tonight.

Tonight I think we might just lay low and have grilled cheese & tomato soup- yum!

Tomato soup and cheese crackers is whats on my lunch menu today. Tonight I won't be cooking because we're going to see Lindsey Buckingham in concert (he's a guitarist/singer for Fleetwood Mac), so we'll probably be grabbing food out tonight.

TOMORROW night though, I'm thinking chicken casserole and crescent rolls... Maybe some peas and carrots too.
